A Sweet Spring Treat
I am a big fan of tea! I love them all, but Earl Grey has a special place in my heart. I came across a recipe for black tea sugar cookies years ago, and thought, how incredible would these be if I used Earl Grey! The Earl combined with a little vanilla made these cookies taste just like a cozy London Fog, which is comprised of Earl Grey tea, vanilla syrup, and streamed milk. They are perfect for a little sweet Spring treat!
I had the most perfect pansies and violas blooming in my planters on my front steps at the time, and I decided to dress up my cookies with them. I sugared the flowers and “glued” them on top with a little egg wash. These cookies were almost too pretty to eat!
Ingredients-
For the cookies:
1/4 Cup Powdered Sugar
1/4 Cup Granulated Sugar
1/2 Cup Butter (Room Temperature)
1 Egg
1.5 Cups Flour
1/2 TSP Earl Grey Tea Leaves
1/2 TSP Baking Powder
Pinch of Salt
3/4 TSP Vanilla Extract
2 TBSP Turbinado Sugar
For the Flowers:
Edible Flowers (I used Pansies and Violas
1 Egg White
1/2 Cup Granulated Sugar
Instructions-
In a stand mixer fitted with the paddle attachment cream the butter, powdered sugar, and granulated sugar together till light and fluffy.
Add the egg and vanilla extract and blend well.
Add the flour, tea leaves, baking powder and salt. Mix to combine into a soft dough.
Roll the dough into a log and then roll in turbinado sugar.
Wrap tightly in plastic wrap and refrigerate for 2 hours.
Wash the edible flowers thoroughly and pat dry with a paper towel.
With a paintbrush, paint the egg whites onto the flowers, back and front and sprinkle with granulated sugar. Allow to dry completely.
Preheat the oven to 400°F and grease a baking sheet.
Sliced the chilled dough into 1/4 inch slices and arrange on a baking sheet.
Place the sugared flowers on top of each slice.
Bake 6-8 minutes
Cool for 2 minutes on baking tray, before transferring to a wire rack to cool completely.
Tips-
I use my favorite bag of Earl Grey for these cookies, I just cut a hole in the bag and measure from there. You could choose any tea that you prefer!
Sometimes instead of rolling the cookies in turbinado sugar, I roll them in coconut for another layer of flavor!
If your in a hurry, you can put the dough in the freezer for about 20 minutes instead of refrigerating it for 2 hours!
